S’more Bites

I found this recipe in SELF magazine along with a few other summer treats, all under 300 calories a serving, and knew I had to test them out. These are cheap, easy, fun to make and a lot of fun to eat! I would totally recommend these to anyone who likes rice crispy treats, s’mores or just needs a creative dessert for an outdoor bar-b-que or campfire.


The Ingredients

3 tablespoons butter
1 bag (10 oz) marshmallows
6 cups rice-crisp cereal
1 cup melted semisweet chocolate chips
7  graham crackers
1 cup marshmallow Fluff



To Make

Make the Rice Crispy Treats first. [Most directions for making Rice Crispy treats will tell you, melt butter on the stove then add marshmallows, I prefer the microwave.] In a microwave safe bowl soften the butter in the microwave, only for a few seconds, this is a trick I use. Once the butter is  slightly melted, swirl it around the bowl so it coats the sides, this will keep the marshmallows from sticking to the sides of the bowl. Then add your bag of marshmallows. Put back in microwave for about 3 minutes, keeping an eye on them so they don’t expand out of the bowl. Stirring once about half way through.


Once marshmallows are completely melted, immediately stir in the rice cereal. The warmer the marshmallow the easier it is to stir. Pour the cereal in increments this makes sure they cereal is evenly coated. Now this is important: Resist the urge to abandon the rest of the recipe when you see how gooey and yummy it looks when only about half the cereal is stirred in.

In the Bottom of a 9″ x 13″ pan, spread half of cereal mixture into a thin even layer. Tip to spreading cereal: take a little wax paper, spray with Pam, use this to push the cereal mixture into the corners of the pan, the marshmallow wont stick to your spoon or hands this way.


Top with warmed chocolate. Tip to melting chocolate: In a small saucepan over medium-low heat place the chocolate chips, let them heat up for a minute and as soon as you see that the chocolate is beginning to melt lift pot off heat slightly and stir with a wooden spoon, keep stirring, holding the pot just above the heat until it’s melted.

Place graham crackers in a single layer over chocolate. Top with Fluff. The Fluff can be a little tricky to spread so I wouldn’t be too worried about measuring out exactly 1 cup.  Spread remaining half of cereal mixture; press down lightly to cement layers together.

Let sit at room temperature for at least 15 minutes before cutting and serving. I popped them in the fridge for about 10 minutes before cutting up. It helped the marshmallow treats to set and made them much easier to eat.

144 calories per square, 4 g fat (2 g saturated fat), 27 g carbs, 1 g fiber, 1 g protein

*Shortened directions for printing:
Melt butter and marshmallows in microwave safe bowl on high for 3 minutes or until melted, stirring once halfway through. Combine cereal mixture. In the bottom of a 9″ x 13″ pan, spread half of cereal mixture into a thin, even layer. Top with melted chocolate. Place graham crackers in a single layer over chocolate. Top with Fluff. Spread remaining cereal mixture on top; press down slightly to cement layers together. Let s’mores sit and cool before cutting and serving.
