Cucumber & Blueberry Salad with Feta

Cucumber Blueberry SaladI love refreshing salads in summer. This cucumber and blueberry salad is great to have as an addition to your summer bar-b-que or as a mid day snack. This is super simple and easy to make and lends itself to lots of tweaks or additions depending on whatever tickles your fancy. A few suggestions: Feel free to use a different vinaigrette or add mint, watermelon or mango.

You’ll need: 2 cucumbers, 1 pint blueberries, 4 ounces (1/4 pound) Feta cheese, 1/4 cup “Wegman’s Pomegranate Blueberry Vinaigrette”

Combine all ingredients and toss gently.

The sweeter your ingredients (i.e. the fruit and vinaigrette) the sweeter the salad. Depending on the blueberries you get they may be a little tart but this will go great with sweet and smoky barbeque. If you are looking to have this as more of a snack on its own I might try adding some watermelon and mint. Both however will pair great with a nice Blueberry Ale like Saranac’s Blueberry Blonde Ale.
